Ingredients and spices that need to be Take to make Panjiri Thekua:
- 1 1/2cup wheat flour
- 1/4 cup semolina
- 3/4 cup coarsley grind Sugar
- 3 tbsp ghee
- 1/4 cup dry coconut, grated
- 1 tbsp fennel seeds, crushed
- 6-8 cashew, finely chopped
- 6-8 almonds, finely chopped
- 6-8 pistachios, finely chopped
- 1 tsp cardamom powder
- 1/2 tsp dry ginger powder
- as required Ghee or oil to deep fry Thekua
Instructions to make to make Panjiri Thekua
- In a big mixing bowl add in dry coconut, almonds, cashews, Pistachios, fennel seeds, cardamom powder, dry ginger powder wheat flour, semolina and sugar. Mix everything together.
- Now add on ghee crumble and mix well making sure the dough holds shape, if not add more ghee upto 1tsp.
- Further, add in water little by little. Use small spoon to add water. Make a tight dough. Tips: do not add more water at a time just enough to bind the dough.
- Grease Thekua mold or you may also use any mold or shape. Take a small ball sized dough and gently press it on the mold, do not make it too thick or thin. Similarly make 4-5 Thekua at a time.
- Heet ghee in a heavy kadai. Keep the flame on low. Add in prepared Thekua, do not touch it right now. Once the Thekua starts floating, gently flip it.
- Fry until both sides turned golden. It takes approx 12-15 minutes to fry one batch. Once the Thekua comes to room temperature it turns super Crispy and Mouthmelting.
- Let all Panjiri Thekua come to the room temperature then store them in a airtight container. Enjoy
