  1. 1 kg gajar /carrot
  2. 150 g sugar or as per taste
  3. 4 tbsp ghee
  4. 500 ml full fat milk
  5. 200 g mawa / khoya
  6. 2-3 cardamom, crushed
  7. 3-4 tbsp chopped dry nuts (Almonds, Pistachios, cashews..)

  1. Firstly rinse, peel and grate all carrots. In a heavy kadai heat ghee and add grated carrots mix carrots and ghee well...cook it for 15 minutes or till carrots become soft.
  2. Meanwhile in another pot heat milk add mawa in milk. Mix both together nicely and cook them in medium flame for 10 minutes or till milk becomes half. Keep this mawa-milk or Rabdi aside.
  3. Now add sugar and 1tsp cardamom powder..... mix well and continue to cook on low - medium flame, you will see carrots begin to release moisture. Cook till moisture evaporated. Further, add mawa-milk that we prepared before. Add chopped dry fruits. Mix everything very well.
  4. Simmer till the whole halwa mixture becomes dry. The milk should evaporate completely and you will see fine milk solids in the carrot halwa. Turn off flame. Gajar Halwa is ready.
  5. You can store this halwa in refrigerator upto 7-10 days Serve hot or cold. Garnished with some chopped pistachios. Enjoy
