  1. Blanch spinach leaves and make a smooth paste.
  2. In pan / kadhai, pour the spinach paste + salt + sugar + cardamom powder and cook for 5-6 minutes so that rawness goes off completely.
  3. Mixture will thicken and keep aside.
  4. In moderately heated pan / kadhai, add ghee, add sooji and roast for 3-4 minutes, then add hot water and stir continuously so that no lumps is formed. Add sugar and mix well.
  5. Let sugar mix well with sooji, add 4-5 tbsp of spinach purée and mix well. Simmer for 4-5 minutes and mixture will turn thick.
  6. Now sooji mixture is ready for further process, transfer to a plate / thali, let it cool to some extent so that it is easier to give the shape of laddoos. Grease palms and start binding laddoos.
